Semolina is an incredibly important part of the Moroccan kitchen. Ground to various levels of coarseness, semolina is used to make homemade bread as well as other Moroccan specialties such a baghrir, harcha and mlaoui.
Medium grade semolina can be used to make a number of traditional dishes, including harcha - a semolina griddle cake that's often drizzled with honey and enjoyed for breakfast.
